Sara Ramen's Easy 7-Ingredient Zucchini Quiche
Welcome to Put on a Spread, a recipe series that takes you inside the kitchens – and dining rooms – of some of our favorite home cooks. For this installment, model, travel enthusiast, and Italian food lover Sara Ramen, shares her recipe for a simple zucchini quiche.
Picture this: it's a warm, summer's day in France, there's a beautiful dressed dining table in the backyard, glasses of wine are at the ready and the aroma of a home-cooked quiche wafts through the house.
While we'd love to be wining and dining in France right now, this is still a scenario you can re-create without having to leave your home, thanks to this delectable zucchini quiche recipe.
Requiring only seven ingredients (most of which you'll already have on hand), each mouthful you're delighted with a creamy filling and a buttery crust.
While it's an impressive dish that will satisfy your guests, it also makes for the perfect midweek meal (breakfast, lunch, or dinner) that can also be meal-prepped for the week ahead.
Ingredients
- Your favorite short crust pastry (enough to fit a 24cm dish)
- 650g zucchini, sliced into thin round pieces
- 3 tbsp extra virgin olive oil
- 3 eggs
- 200ml crème fraîche
- 2-3 tbsp grated Parmesan cheese
- A handful of torn basil leaves
Method
Preheat the oven to 180 degrees. Roll out the dough, prick the base with a fork, and blind bake the pastry for 15 minutes. Remove from oven.
Heat the olive oil in a deep frypan and cook the zucchini until it's soft. Don’t let it brown too much. Remove from the pan and place in a colander to drain.
Meanwhile, whisk the crème fraîche and eggs together in a medium bowl, and season with salt and pepper.
Place the zucchini into the pastry, layering in the torn basil leaves and 2 tbsp of Parmesan cheese.
Pour the cream mixture over the zucchini and sprinkle the remaining Parmesan over the top.
Place in the oven for about 40 – 45 minutes. You may want to turn the quiche around at the 20-minute mark so it’s evenly golden.
Remove from oven when golden and eat when it's warm!
